
For variety use different vegetables, such as blanched broccoli florets, blanched celery or carrots.
Serves 2-4 with plenty of boiled rice and other dishes.
Ingredients
4oz/115g onion chopped
1 medium red pepper deseeded and sliced into strips
1 medium green or yellow pepper deseeded and sliced into strips
1 small courgette sliced
3oz/75g mushrooms sliced
1 teaspoon of salt and sugar
1 tablespoon vegetarian Oyster Sauce
1 tablespoon sesame seeds
Method
Heat a wok and add a tablespoon of oil. When it is very hot, add the onions and stir-fry for 30 seconds, then
add the peppers and courgette, salt and sugar. Stir-fry for 1 minute and then add the mushrooms. Cook for
another minute, add the sesame seeds and stir well. Cook for 1 more minute, stir-frying continually and add
the Oyster sauce. Stir well to coat all the vegetables and serve.
