Serves 4

Ingredients
1 lb. / 450g Brussel sprouts
1 medium onion
1oz/25g butter or margarine


Method
Trim and cook the sprouts in the normal way. While these are cooking, peel the onion and cut into eighths. When the sprouts are ready, drain them and put to one side.

Melt the butter or margarine in a saucepan and add the onions. Stir-fry until they soften, usually about 4 minutes and then add the sprouts and mix well.

Transfer to a serving dish and sprinkle with black pepper.
Can be made in advance and reheated in a microwave, omitting the pepper until after reheating.
