Ingredients
1 medium onion finely chopped
3oz/80g fresh white breadcrumbs
1 tablespoon fresh sage finely chopped
1 free range egg beaten
Salt and black pepper

Method
Heat a tablespoon of oil in a saucepan, add the onion and cook until soft without browning.

In a bowl, mix together the crumbs and sage. Add the onions and season with salt and pepper. Mix in the beaten egg, a little at a time, to bind the mixture.

The stuffing can be frozen at this stage by double wrapping in plastic film..

When ready to cook, divide the mixture into balls and then transfer them to a dish or baking tray, dot with margarine or butter and bake for 30 minutes
