Method
Preheat the oven Gas6/200C/400F. Choose the required amount of potatoes, peel, halve or cut them into thirds depending on their size or even leave small ones whole.

Parboil them for 5 minutes, then drain and put to one side. Choose equal size medium parsnips allowing one or two per person. Top and tail and peel them.

Put all the vegetables in a roasting tin and sprinkle with your favourite oil turning the vegetables over to make sure they are all coated. Sprinkle with salt and pop in the oven for about 20 minutes, checking from time to time and turning as necessary.

After the 20 minutes add some peeled cloves of garlic, probably a whole bulb, and return to the oven for another 20 minutes, until the potatoes are crisp and golden
