Serves 4

Ingredients
6oz/175g shortcrust pastry
6oz/175g broccoli cut into small florets
6oz/175g onion chopped
3oz/75g mushrooms chopped
4 free range eggs
Milk
Salt and black pepper
3oz/75g strong vegetarian cheddar grated

Method
Cook the broccoli in the normal way. Meanwhile, sauté the onion in a frying pan for a few minutes, add the mushrooms, salt and pepper and continue cooking until the mushrooms wilt and the onions are translucent.

Grease a 9-inch flan dish and line it with the pastry. Beat the eggs in a measuring jug and make up to ¾ pint/15floz with milk.
Put the onion mixture in the base of the flan, followed by the broccoli and season with black pepper. Sprinkle over the cheese and then pour over the egg mix.

Bake in the centre of a preheated oven Gas 5 / 190C / 375F until firmly risen and golden brown, about 40 minutes.
