Organic potatoes, although more expensive, really do make tastier chips with crispy outsides and fluffy insides.

Method
Choose the amount of potatoes required, peel them and cut them into thick chips.

Preheat the oven to gas mark 8/220C/450F. Bring a pan of water to boil, add the potatoes and bring back to the boil. Cook for 6 minutes and then drain gently into a colander, allow to cool. Brush a large baking tray or roasting tin with a little oil, then add the chips, turning them to coat with the oil.

Place on the top shelf of the oven for about 20 -25 minutes, turning them from time to time to brown them evenly. The cooking time can vary, depending on the type of potatoes.
