Serves one

Ingredients
2 free range eggs
Pinch of salt


Method
Beat 2 free range eggs with a pinch of salt. Heat a non-stick frying pan, about 6-inch in diameter, and add a small knob of butter, no more than ½ oz/ 15g.

Pour in the egg mix, and cook gently until the top bubbles a little. Then loosen the edge of the egg mix with a spatula and allow any liquid to drain underneath. Cook until the underneath is set and then flip it over to cook the other side.

Place grated cheese, cooked mushrooms, onion or spinach on one half and fold over the other half. Or serve plain with any salad, jacket potatoes or chips.
