Ingredients

Pint/600ml of milk
1½oz/40gm of plain flour
1oz /25gm of margarine
or butter
Black pepper to taste
1 rounded teaspoon of English mustard
Method
Melt
the margarine or butter in a saucepan and remove from the heat. Gradually stir
in the flour, followed by the milk. Season with black pepper and add the mustard.
Return the pan to the heat and continue stirring until the sauce comes to the
boil and thickens.
Use for au gratin dishes, or turn into cheese sauce by adding 3 to 4 oz / 75 to 100g of favourite grated cheese to taste.
