This deliciously light sauce can be used with vegetarian sausages, burgers and pastry dishes etc. It is especially useful in a vegan, gluten free or dairy free diet.

 

 

Ingredients

1 large leek thinly sliced

2 onions chopped

1 medium potato peeled and diced

½ vegetarian stock cube crumbled

Black pepper

1pt/570ml Soya milk

 

Method

Put  all the ingredients in a large pan bring to the boil and simmer gently for 30 minutes but watch for boiling over.Whizz in a mixer until smooth and thin with more milk if necessary. Check seasoning and serve. Freezes well.
