Serves 4
Ingredients
1
carrot scrubbed
1 red pepper
1 onion
2 oz beansprouts
2 celery sticks
Dressing
4
tablespoons oil
2 tablespoons light soy sauce
2 teaspoons lemon
juice
1 teaspoon sugar
1 teaspoon sesame oil
Method Cut the
carrot into matchsticks. Deseed and cut the pepper into strips. Chop the onion
and slice the celery into matchsticks. Put the vegetables and the bean
sprouts
into a serving dish and pour over the dressing. If possible leave for a few hours
to marinate before serving.
Put
all the dressing ingredients into a screw top jar and shake to mix well.
Serve on Chinese leaves or any favourite salad leaves.
