This recipe makes a pleasant change from cauliflower served with cheese sauce..

Serves 4

Ingredients
1 small to medium cauliflower
4oz/115g onion chopped
2oz/50g butter
2 tablespoons sultanas
Black pepper

Method
Separate the cauliflower into florets and cook in boiling salted water until tender but still firm. Drain and keep warm.

In a separate pan, melt the butter and add the onion. Cook gently, without browning, until the onion is soft, probably 8 – 10 minutes. Toss in the sultanas and cook for a further minute until the sultanas are soft and swollen.

Stir in the cauliflower gently, to coat with the buttery mixture and then spoon into a serving dish.

Can be made hours in advance and reheated in a microwave oven.
