Ingredients
¾ pint/15floz of milk
1 lb/450gm broccoli
1oz/25g butter
1½/40gm plain flour
3 oz/75g grated strong vegetarian cheddar cheese
Teaspoon English mustard
Method
Cook the broccoli in the usual way and transfer to a heatproof serving dish. Melt the butter in a saucepan,
remove from the heat and stir in the flour. Gradually and smoothly add the milk.
Return to the heat, stirring all the time and bring to the boil to thicken. Add the mustard and blend well. Pour over the broccoli, sprinkle with black pepper and at this stage the dish can be cooled and frozen. Open freeze and then double wrap in foil or plastic film.
Otherwise, sprinkle with the cheese and bake in a hot oven or pop under the grill until golden brown.
