
Use really good
oil, preferably organic cold pressed Soya oil or extra virgin olive oil. Cold pressed oils are much more
nutritious, as they retain all the fatty acids and vitamins essential for good health
This basic mix can be easily varied. Add chopped dried or fresh chillies or chilli powder, chopped fresh
herbs, or chopped fresh or roasted garlic.
Quantities can be doubled and kept refrigerated for many days.
Ingredients
4 tablespoons olive oil
1 tablespoon white or cider vinegar
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon sugar
1 teaspoon French mustard
Method
Put all the ingredients into a screw top jar and shake until well mixed and emulsified.
Try to keep a quantity in the fridge ready for use.
