
Fatty acids are found in every body cell and are essential to good health. The body cannot make them itself.
These fatty acids are thought to be extremely beneficial in the development of the cellular growth of the immune system, brain and nerve insulation. They also thought to aid wound healing, have an anti-oxidant effect, improve the body’s nutrient intake and be good for the hair, skin and nails.
Two of the most important fatty acids are omega 3 and omega 6
There is still some debate in scientific circles as to the ideal ratio between the two types of fatty acids but it is generally thought to be two parts of omega - 3 to 1 part omega - 6
Recent research has discovered that Hempseed oil is rich in both omega - 3 and omega - 6 and is the most balanced source available and contains a fatty acid called GLA which is an anti- inflammatory.
Some would say that a vegetarian diet lacks omega 3 essential fatty acid, which is found only in oily fish. The draw back of fish oils is their potential for containing toxins in the form of heavy metals and pesticides from water pollution.
Flaxseed (Linseed) oil is much richer in omega 3 fatty acids than fish oil and is an alternative safe source.
When choosing oil some consideration should be given to the way that they are produced.
In all recipes on this site we use first cold pressed oils. (First cold pressed extra virgin olive oil or first cold pressed seed oils)
These are produced in the traditional way. The pressing process is done at low temperatures and consequently the vitamin content is preserved.
N.B.
Cold pressed oils tend to oxidise so to prevent this natural occurrence store in the fridge
Other methods of production involve either using high pressure, temperature and deodorization or use petroleum solvents, caustic soda, high temperatures and bleaching .
When refined in these ways some of the natural vitamin and mineral content are lost. The refining process also damages the essential fatty acids.
