Monday Spaghetti Bolognese
Hints The sauce can be made in advance i.e. the
day before and it also freezes well. Cook spaghetti the usual way and serve with grated Parmesan or cheese
of your choice. Wednesday Broccoli and mushroom quiche with Chinese salad Hints The quiche can be made and frozen in advance, if having a baking day make two at a time or just make two or three amounts of short crust pastry and freeze them for later as fillings for pies and quiches do not take long to make. The dressing for the Chinese salad will keep in a
screw top jar in the fridge for many days. Friday Pinto bean hotpot with broccoli Hints This tasty version of hotpot is much easier and quicker to prepare because there is no meat to cook. Traditionally, cheap cuts of lamb are used which take quite a while to tenderise. Serve with plainly cooked broccoli tossed in pepper and butter or turn into au gratin by coating with mustard sauce and grated cheese, grilled until golden brown. It can be made before hand and frozen without the potato topping. Saturday Moussaka with two beans in sesame Hints The dish can be prepared up to the topping stage and frozen, or just the sauce can be made and frozen, leaving the aubergines and topping to prepare later. Sunday Vegetable casserole with dumplings, cauliflower cheese Hints Make two amounts of dumplings at a time, wrap separately in cling and freeze. Cauliflower cheese freezes well, defrost completely before adding the grated cheese.
